How to eat a gluten free diet you ask?
It is not easy. First you need to take a few deep breathes and tell yourself this is a good thing!!
Then you need to research what exactly Gluten is. It is a protein found naturally in Wheat, Rye, and Barley. So basically you need to eliminate Wheat, Rye, and Barely from your diet. Sounds easy enough....until you begin to read food labels. So no bread, no cereal (except the ones made with rice) no pasta, no FAST FOOD, ALL of the prepackaged food is eliminated. That is the good thing. Because these foods are processed somewhere and aren't exactly the type of fuel your body needs. But here is the tricky sneaky thing about all this....... some food that shouldn't have gluten in it, DOES. French Fries from McDonald's.... honey roasted peanuts......yummy Italian salad dressing.....ketchup......candy...... some ice cream..... some cereal that is made from rice.....sometimes these foods are processed on machinery that also processes food with wheat.
So lets get to a Gluten free diet.
RICE, RICE, and more RICE. I have learned to love it and even crave it. I have a handy rice cooker and it cooks the rice fast. I like the Jasmine rice. I haven't acquired the taste for brown rice which i should since it is healthier. Rice alone is boring so add chicken and vegetables. Great for leftovers at lunch. Salads, Salads, Salads...... can't get enough of those leafy greens. Toss in some little cherry tomatoes. My new fav is baked Salmon with steamed vegetables and baked potato. Baked potatoes, mashed potatoes, OrIda country style french fries with gluten free ketchup. Rice Crisp bars. Jello. Fresh Fruit. Gluten Free protein shake with blueberries and bananas. Rice cakes with peanut butter. Yogurt with flaxseed meal. Corn flakes, rice crispies, cream of rice (yum).
My menu is short right now but when dealing with a new food intolerance, you have to start with a short menu to know what works and what doesn't. So now I have eliminated fast food, prepackaged foods, and really just eat the foods I should. I was right, it is a good thing.
However, I am getting a Gluten Free cookbook... because my gluten free baking attempts have been close to failures. Key word in Gluten is Glu..... without wheat there is nothing to bind the food.
